Rusty Jeffers - Recipe for Off Season and Normal Life

Rusty posted his recipe for off season and normal life to Milos' forum:

"This is my absolute favorite when dieting or just cutting back...the regular version is reserved for off season or normal life...try this one and remember, try to use fresh rosemary, it makes a world of difference...

Rosemary Chicken Magnifique

4 whole chicken breasts (skinned, trim fat, and cut into cubes)
2 cups sliced mushrooms
1 can nonfat chicken broth
2 cloves garlic, minced
dash thyme
1 tsp ground sea salt or regular salt
2 large sprigs of rosemary or 1 tsp dry
1 whole onion chopped
4-5 cups of Rice (white or brown, I prefer white on this one)

Chop Chicken and saute with Pam Spray till cooked, transfer to a pot with chicken broth and bring to a light simmer.

Saute onions, mushrooms and garlic in a pan using Pam Spray, when cooked toss into chicken and broth, add seasonings and lightly simmer for 30 minutes.

When cooking rice, you can also use nonfat chicken broth instead of water, it will definitely make it taste better"

The only real fat here is in the oil, so depending on your diet, you can omit it or keep it.

Chicken Cacciatore

1 lb. chicken cut into strips
1/2 cup chopped onion
1 clove garlic, minced
2 tbsp. oil
1 can (20 oz) tomatoes (if you don't have seasonings, buy the tomatoes that already have them in there!
1 can (8 oz) tomato sauce
1/2 tsp oregano and basil
1;8 tsp ground red pepper
1 cup green peppers cut into strips
2 cups Rice (or more)

Cook rice while making chicken. I never use a set amount, 2 cups, you can use more.. depends on how much carbs I need... Brown chicken, onion, bell peppers, and garlic in oil...or use Pam Spray or chicken broth. Add tomatoes, sauce and seasonings. Bring to a boil, stir in rice, cover and remove from heat. Let stand for 5 minutes before serving."
