Rusty Jeffers - Pre-contest Recipe

Rusty posted his precontest recipe to Milos' forum:

"I ate this almost every day before the Masters Pro World. It’s high in protein, low in fats, low in carbs (unless you serve it over rice) and is really tasty!


Rusty's Seafood Saute

8 oz. fresh salmon filet
1 dozen medium shrimp
8 oz. fresh scallops
4 green onions (leave whole)
6 oz. sliced or whole mushrooms
2 tbsp. minced fresh garlic
8 large spears asparagus
sea salt to taste
Rice
Pam Cooking Spray (butter flavored)

If you are serving over rice, cook ahead of time in a rice cooker or pot. Spray a large pan with butter flavored Pam Cooking Spray and heat to medium/medium high. When hot, place washed salmon/shrimp/scallops together in pan, sprinkle with sea salt, garlic and cover..watch closely so they don’t burn, about 2 to 3 minutes. Remove cover and turn salmon, toss shrimp and scallops and add mushrooms, and asparagus. Keep turning veggies for a couple of minutes and place whole green onions on top. If salmon and scallops cook more than 5 minutes, they get tough. If you want, remove seafood and keep tossing veggies until they get some sear marks on them or are to the consistency you like...I like them to be a little firm. The whole thing shouldn’t take more than 7 or 8 minutes to cook. Place rice on plate and cover with seafood saute."
